Heat 1 tablespoon of avocado oil in a large pan or skillet over medium-high heat. Add 1 pound of ground beef to the pan. Break up the meat with a spoon and cook until it is completely browned, about 5-7 minutes.

Once the meat is browned, drain any excess fat from the pan. Add 1 tablespoon of minced fresh ginger and 2 cloves of minced garlic to the pan with the cooked beef. Sauté for 1 minute, stirring frequently until fragrant.

While the meat is cooking, in a separate medium bowl, combine 1/2 cup of coconut aminos, 1/4 cup of honey, 1 tablespoon of sriracha, 2 tablespoons of rice vinegar, and 1 tablespoon of sesame oil. Pour the prepared sauce into the pan with the beef and aromatics. Add any desired vegetables, such as broccoli florets and sliced carrots, to the pan. Stir to combine everything and cook for 3-5 minutes, until vegetables are tender-crisp.

Add the cooked noodles to the pan with the meat, vegetables, and sauce.

Toss all the ingredients together vigorously until the noodles, meat, sauce, and vegetables are well combined and heated through, about 2-3 minutes. Ensure the noodles are thoroughly coated in the sticky sauce.

Serve immediately, garnished with chopped green onions and sesame seeds.
