Thinly slice the 15g ginger. Separate the whites of the 3 spring onions from their greens. Thinly slice the spring onion greens and set aside for the sauce.

To a pot, add enough water to cover the chicken. Then add the sliced ginger, the whites of the spring onions, 2 tablespoons white vinegar, 1 teaspoon Sichuan peppercorns, and 1/2 teaspoon ground black pepper. Add the 1kg chicken breasts to the pot and cook on medium heat for 18 minutes.

While the chicken is poaching, cook the 400g noodles according to the package instructions. Drain and set aside.

Thinly slice the cucumber for serving.

In a bowl, combine 4 tablespoons sesame paste, 3 tablespoons peanut butter, 1 tablespoon chicken powder, 10 tablespoons poaching liquid (from the chicken pot), 4 tablespoons light soy sauce, 4 tablespoons black vinegar, 1 tablespoon sesame oil, 2 tablespoons chilli oil, and 1 1/2 teaspoons white sugar. Add the thinly sliced spring onion greens to the sauce mixture. Mix all ingredients well until combined and set aside.

Once the chicken has finished poaching, immediately transfer it to a bowl of ice water to cool down. Once cooled, finely chop or shred the chicken.

Serve the cooked noodles in individual bowls. Arrange the sliced cucumber and chopped or shredded chicken on top of the noodles. Drizzle the prepared sauce generously over everything. Add extra chilli oil to taste, and enjoy.
