In a large skillet, cook the diced bacon over medium heat until crispy and golden brown. This will take approximately 8-10 minutes. Using a slotted spoon, remove the cooked bacon from the skillet and place it on a paper towel-lined plate to drain. Reserve 1 tablespoon of the crispy bacon for garnish later. Leave the rendered bacon fat in the skillet.

Add the thinly sliced white onion to the same skillet with the bacon fat. Cook over medium-low heat, stirring occasionally, until the onions have softened and become translucent, about 8-10 minutes. Sprinkle the brown sugar over the onions and continue to cook for another 10-12 minutes, stirring frequently, until the onions are deeply caramelized and golden brown.

Transfer the caramelized onions to a small bowl and set aside to cool slightly.

In a medium mixing bowl, combine the softened cream cheese, paprika, garlic powder, salt, and honey. Mix with a spoon or rubber spatula until well combined and smooth.

Fold in the chopped fresh chives, shredded cheese, the majority of the cooked bacon (reserving the 1 tablespoon for garnish), and the cooled caramelized onions. If using, fold in the toasted sliced almonds.

Transfer the dip to a serving bowl. Garnish with the reserved crispy bacon and an extra sprinkle of fresh chives, if desired. Serve immediately with toasted bread, croutons, or your favorite crackers.
