In a medium bowl, combine the chicken cubes with salt, red chili powder, coriander powder, garam masala, turmeric powder, curd (yogurt), ghee, ginger-garlic paste, and lime juice. Mix well to ensure the chicken is evenly coated. Stir in the chopped coriander and mint leaves.

Heat a pan over medium heat.

Add the marinated chicken to the hot pan. Cook for 4 minutes without stirring, allowing a nice coating to form on the bottom.

Flip the chicken pieces and cook for another 4 minutes on the other side.

The chicken may release some moisture at this stage. Continue cooking for a final 4 minutes, stirring occasionally, until the liquid evaporates and the masala coats the chicken.

Garnish with extra chopped coriander and mint leaves, if desired, and serve immediately.
