Preheat your oven to 425°F. Line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.

Prepare the cabbage: Carefully cut off the bottom core of the large green cabbage. Then, slice the cabbage into thick 1-inch rounds, creating individual 'steaks'. Arrange these cabbage steaks in a single layer on the prepared baking sheet, ensuring they don't overlap.

In a small bowl, combine the olive oil, minced garlic, Italian seasoning, paprika, salt, and black pepper. Whisk or stir with a brush until all ingredients are well combined, forming a fragrant garlic herb oil mixture.

Using a pastry brush, generously coat both sides of each cabbage steak with the garlic herb oil mixture. Ensure an even coating for maximum flavor.

Place the baking sheet with the cabbage steaks into the preheated oven. Roast for 25–30 minutes, carefully flipping the steaks halfway through the cooking time (around 12-15 minutes) using tongs to ensure even cooking and browning.

After the initial roasting, remove the baking sheet from the oven. Evenly sprinkle the shredded mozzarella cheese and grated Parmesan cheese over the top of each cabbage steak.

Return the baking sheet to the oven and bake for an additional 5–7 minutes, or until the cheese is completely melted, bubbly, and golden brown.

Carefully remove the cheesy baked cabbage steaks from the oven. Garnish generously with fresh chopped parsley before serving warm.
