Preheat the oven to Fan 150°C and line two baking trays with parchment paper.

In a large bowl, combine the rolled oats, mixed seeds, chopped hazelnuts or walnuts, chopped pecans, chopped pistachios, and almonds.

In a small saucepan, gently heat the coconut oil, maple syrup, honey, vanilla extract, ground cardamom, ground ginger, and ground cinnamon until the coconut oil has melted and the mixture is well combined.

Pour the warm liquid mixture over the oat and nut mixture in the large bowl. Add the sea salt flakes and mix thoroughly until all ingredients are evenly coated.

Spread the granola mixture out in a thin, even layer on the prepared baking trays.

Bake for approximately 15 minutes. Remove the trays from the oven, add the coconut flakes and mixed dried fruit, and mix well to distribute them evenly.

Return the trays to the oven and bake for another 10-15 minutes, or until the coconut flakes are lightly browned and the granola is golden and fragrant.

Remove the granola from the oven and set it aside to cool completely on the baking trays. The granola will crisp up as it cools.

Once cooled, transfer the granola to an airtight container for storage. Enjoy with yogurt bowls or as a snack!
