Prepare the vegetables: Mince the garlic, chop the onion, and chop the tomatoes. Slice the saba banana and sweet potato. Cut the bok choy into pieces. Drain the chickpeas and green beans.

Heat a large pot over medium heat and add the cooking oil.

Add the minced garlic to the pot and sauté until fragrant, about 1-2 minutes. Add the chopped onions and sauté until translucent, about 3-5 minutes. Add the chopped tomatoes and cook until soft, about 5-7 minutes.

Add the pork belly to the pot and cook until lightly browned on all sides, about 8-10 minutes.

Pour in the tomato sauce, banana ketchup, and soy sauce. Add the sugar, black pepper, and salt. Mix all ingredients well to combine.

Add the water and bay leaf to the pot. Bring the mixture to a rolling boil.

Reduce the heat to low, cover the pot, and simmer for 1 hour or until the pork is very tender.

Add the chorizo, saba banana, and sweet potato to the pot. Cook for 5 minutes, or until the vegetables are slightly tender.

Add the drained chickpeas and green beans to the pot. Cook for 2 minutes.

Finally, add the bok choy and cook for another 1 minute, just until wilted.

Serve the Pochero hot, ideally with steamed rice.
