In a medium bowl, combine the Greek yogurt, peanut butter, cacao powder, and maple syrup (or honey). Mix thoroughly until the mixture is well combined and smooth.

Line a plate or baking sheet with parchment paper. Spoon six dollops of the yogurt mixture onto the prepared parchment paper, spacing them out evenly.

Place the plate with the yogurt dollops into the freezer and freeze for 1 1/2 to 2 hours, or until the bites are completely firm and frozen solid.

While the bites are freezing, or when they are almost ready, prepare the chocolate topping. In a microwave-safe bowl, melt the dark chocolate with the optional coconut oil. Heat in 30-second intervals, stirring well after each, until smooth. Allow the melted chocolate to cool for a few minutes before dipping.

Once the yogurt bites are fully frozen and the chocolate has cooled slightly, quickly dip each frozen bite into the melted chocolate. The chocolate will set very fast. If the chocolate in the bowl starts to set, re-melt it in the microwave for a few seconds.

Store the finished chocolate-covered frozen yogurt bites in an airtight container in the freezer. When ready to serve, let them defrost for about 15-20 minutes to achieve a softer texture.
