Preheat the oven to 400 degrees F. Cover a sheet pan with foil or parchment paper. Place chicken thighs on a work surface and blot with paper towels.

In a small bowl, combine salt, black pepper, smoked paprika, granulated garlic, and granulated onion. Sprinkle both sides of the chicken with the seasoning mixture; place thighs in the prepared pan.

Bake in the center of the preheated oven for 15 minutes.

Meanwhile, for the sauce, combine peach preserves, mango habanero sauce, lemon zest, and lemon juice in a small saucepan over medium heat. Stir frequently, until the peach preserves are melted down and the mixture is heated through. When the sauce bubbles, remove from heat.

Generously coat both sides of the chicken thighs with the prepared sauce.

Return chicken to the oven and bake until the chicken is no longer pink at the center and juices run clear, about 10 minutes more. An instant-read thermometer inserted near the center should read 165 degrees F.

Garnish with fresh parsley and lemon slices, and serve warm with any remaining sauce.
