In a large bowl, combine the grated paneer, grated ginger, minced garlic, finely chopped green chilli, ketchup, sweet chilli sauce, soy sauce, and cornstarch. Season with salt and black pepper.

Mix all ingredients thoroughly until well combined and the mixture can be formed into balls. Divide the mixture into 4 equal portions and roll each portion into a firm ball.

Heat a large griddle or heavy-bottomed pan over high heat. Add 1-2 tablespoons of vegetable oil, ensuring it's evenly coated.

Once the griddle is very hot, place the paneer balls onto the griddle. Immediately place a small pile of thinly sliced onions on top of each paneer ball. Using a burger press or a sturdy spatula, firmly smash each paneer ball and onions flat into a patty, about 1/2 inch thick.

Cook the patties for 3-5 minutes on the first side, pressing down occasionally, until they are golden brown and crispy.

Flip the patties. Immediately place a cheese slice on top of each cooked patty. Cook for another 2-3 minutes, or until the cheese is melted and the second side of the patty is golden brown.

While the patties are cooking, lightly toast the burger buns on the griddle or in a toaster until golden.

To assemble, spread mint chutney on the bottom half of each toasted bun. Spread mango chutney on the top half. Add chilli sauce to taste on either half.

Place a cheesy paneer smash patty onto the bottom bun. Top with the other bun half. Serve immediately and enjoy!
