Preheat your oven to 375°F. Line a baking sheet with parchment paper.

In a medium pan, combine the diced apples, 1 teaspoon of ground cinnamon, 1 tablespoon of brown sugar, and 2 tablespoons of butter. Cook over medium heat, stirring occasionally, until the apples have softened, about 5-7 minutes.

While the apples are cooking, unroll the thawed puff pastry sheet onto a lightly floured surface. Cut the puff pastry sheet into 8 equal strips.

Place a portion of the cooked apple mixture onto one end of each puff pastry strip. Carefully roll up each strip of puff pastry, ensuring the apple filling is enclosed.

In a small bowl, whisk the egg to create an egg wash. In another small bowl, combine 2 tablespoons of granulated sugar and 1/2 teaspoon of ground cinnamon for the cinnamon sugar.

Brush the surface of each roll-up with the egg wash, then sprinkle generously with the cinnamon sugar mixture.
