Cut the stems off the swiss chard and wash thoroughly. Prepare boiling water in a large pot and have ice water ready in another bowl.

Dip the washed swiss chard leaves into the boiling water for about 30 seconds, then immediately transfer them to the ice water. This process helps preserve the color and soften the chard.

For the filling, combine ground meat, grated onion, rice, fine bulgur, 1 tablespoon tomato paste, canned tomatoes, salt, black pepper, red pepper flakes, and a little vegetable oil in a large bowl. Knead all ingredients thoroughly.

Cut each swiss chard leaf in half and carefully remove the thick veins.

Place one teaspoon of the meat filling on each side of the leaf and roll into a triangular shape. Repeat this process until all swiss chard leaves are used.

Arrange the cut swiss chard stems on the bottom of a deep pot. Carefully place the rolled swiss chard dolmas on top.

In a separate bowl, mix 2 cups of warm water, 1 tablespoon of tomato paste, salt, and a little vegetable oil to prepare the tomato sauce.

Pour the prepared tomato sauce over the dolmas in the pot. To prevent the dolmas from unraveling, place a heat-resistant flat plate on top.

Cover the pot and cook over medium heat for about 40-45 minutes, checking periodically. Once the rice is soft and the water has been absorbed, remove from heat.

Serve the cooked swiss chard dolma hot with yogurt. Enjoy!
