Season the thick-cut, bone-in pork chops generously on all sides with salt, freshly cracked black pepper, and onion powder.

Heat the olive oil in a large skillet over medium-high heat. Once hot, sear the seasoned pork chops for 2 to 3 minutes per side until beautifully browned. This step creates a flavorful crust.

Carefully place the seared pork chops into the bottom of your slow cooker.

In a small bowl, whisk together the honey, soy sauce, and minced garlic until well combined. This will form your honey garlic glaze.

Pour the prepared honey garlic glaze evenly over the pork chops in the slow cooker. Place a couple of fresh thyme and rosemary sprigs on top of each chop.

Cover the slow cooker and cook on the LOW setting for 4 to 5 hours, or on the HIGH setting for 2 to 3 hours, until the pork is tender and cooked through.

Once cooked, carefully remove the pork chops from the slow cooker and set them aside. If you desire a thicker, stickier glaze, transfer the remaining liquid from the slow cooker to a small saucepan.

Simmer the glaze liquid over medium heat for about 5 minutes, stirring occasionally, until it has thickened to your desired consistency.

Plate the slow-cooked pork chops, spoon the thickened sticky glaze generously over the top, and garnish with fresh herbs (such as additional thyme or rosemary sprigs) and fresh lemon or orange zest before serving.
