Preheat your oven to 400°F. If using a toaster, simply toast the bread as directed in the next step.
Place the bread slices directly on the oven rack or in a toaster. Toast until golden brown and slightly crispy, about 5-7 minutes in the oven or 2-3 minutes in a toaster.
While the bread is toasting, gently warm the nduja in a small microwave-safe bowl for 10-15 seconds, or in a small pan over low heat until it's slightly more spreadable. Be careful not to overheat.
Once the toast is ready, spread 1/4 cup of ricotta cheese evenly over each slice.
Evenly dollop the warmed nduja over the ricotta on each slice of toast, using approximately 3/4 tablespoon per slice.
Drizzle 1/2 tablespoon of olive oil and 1/4 tablespoon of honey over each toast. Sprinkle evenly with sea salt and freshly ground black pepper.
Garnish each toast with minced fresh chives before serving immediately.
