In a pot, add enough water to cover the soya chunks. Stir in the 1 inch grated ginger, 5-6 minced garlic cloves, a pinch of salt, and a pinch of sugar. Bring the water to a boil.

Add the 50g soya chunks to the boiling water and cook until they are tender, about 5-7 minutes. Drain the soya chunks and gently squeeze out any excess water.

Transfer the squeezed soya chunks to a bowl. Add additional salt to taste and 2 teaspoons of red chilli powder. Mix well to ensure the soya chunks are evenly coated.

Brush a pan with a little oil and heat over medium heat. Add the seasoned soya chunks and cook for 5-7 minutes, stirring occasionally, until they are slightly golden and crispy.

While the soya chunks are cooking, prepare the sauce. In a separate bowl, combine 5-6 tablespoons of Greek yogurt, 2 minced garlic cloves, 2 teaspoons of Kashmiri red chilli powder, 2 teaspoons of chilli flakes, 2 teaspoons of oregano, and salt to taste. Stir in the chopped onions.

If the sauce is too thick, add a little water, 1 tablespoon at a time, until you reach your desired creamy consistency.

To assemble, arrange the crispy soya chunks on a serving plate. Spoon the creamy sauce generously over the soya chunks.

Garnish with additional chopped garlic, onions, and fresh coriander before serving.
