Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.

In a medium bowl, combine the drained canned peaches, granulated sugar, 1/4 cup light brown sugar, vanilla extract, and 1/2 teaspoon ground cinnamon. Stir gently to coat the peaches evenly. Set aside.

In a separate large bowl, combine the yellow cake mix, 2 cups water, and 1 cup vegetable oil. Whisk thoroughly until the batter is smooth and no dry spots remain. Do not add eggs to this batter.

Pour the prepared peach mixture evenly into the bottom of the greased 9x13 inch baking dish.

Carefully pour the yellow cake batter evenly over the peaches in the baking dish. Do not stir or mix the batter into the peaches.

In a small bowl, combine the 2 tablespoons light brown sugar and 1/4 teaspoon ground cinnamon. Sprinkle this mixture evenly over the top of the cake batter layer.

Bake for 45-55 minutes, or until the top is golden brown and bubbly, and a toothpick inserted into the cake portion comes out clean.

Remove from the oven and let cool slightly before serving. This cobbler is delicious served warm, optionally with a scoop of vanilla ice cream.
