Place the baby Yukon Gold potatoes into a large pot. Cover with cold water and add a generous amount of kosher salt. Bring to a boil over high heat.

Cook the potatoes until they are fork-tender but not falling apart, which should take about 18 to 22 minutes depending on their size.

Drain the potatoes well and allow them to steam dry in the colander for a few minutes. This helps them crisp up later.
While the potatoes are drying, preheat your oven to 450°F. Line a large sheet pan with parchment paper.

Spread the dried potatoes onto the prepared sheet pan. Drizzle generously with extra-virgin olive oil and season with Maldon salt and freshly cracked black pepper.

Roast the potatoes for 35 to 45 minutes, turning them once halfway through if needed, until they are deeply golden, crisp around the edges, and almost lacy underneath.

While the potatoes are roasting, prepare the Dirty Gurl Martini Aioli. In a medium bowl, whisk together the mayonnaise, Dijon mustard, finely grated garlic, and the zest and juice of one lemon. Add the prepared dirty martini (see step 10-14 for martini preparation if making fresh for the aioli).

Season the aioli with Maldon salt and freshly cracked black pepper to taste, until smooth. Cover and chill until ready to serve.

To prepare the Durty Gurl Martini for drinking (optional): Fill a cocktail shaker with ice. Add the Dirty Girl Vodka and Dirty Girl Aged Olive Brine.

Shake vigorously for 20 to 30 seconds until the mixture is ice cold. Strain into a chilled martini glass and garnish with 3-4 olives. Serve immediately.

Once the potatoes are roasted, arrange them onto a serving platter. Create swooshes of the chilled Dirty Gurl Martini Aioli underneath and around the potatoes.

Scatter the chopped Castelvetrano olives, chopped chives, additional Maldon salt, and fresh lemon zest over the potatoes and aioli.

If using, spoon a little of your favorite caviar onto the dish just before serving.

Serve immediately and enjoy, perhaps with another Durty Gurl Martini!
