Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.

In a large bowl, combine the prepared carrots, 1/4 cup honey, olive oil, minced garlic, dried dill, salt, and cracked black pepper. Toss thoroughly until all the carrot pieces are evenly coated with the mixture.

Spread the seasoned carrots in a single layer onto the prepared baking sheet. Ensure there is enough space between carrots for even roasting and crisping. Avoid overcrowding the pan; use two baking sheets if necessary.

Roast the carrots for 20-25 minutes, or until they are tender and have developed a caramelized, slightly crispy exterior. Halfway through roasting (around 10-12 minutes), gently toss the carrots to ensure even cooking.

Once roasted, remove the carrots from the oven and transfer them to a serving dish.

Crumble the feta cheese evenly over the hot roasted carrots. The residual heat will slightly soften the feta.

Garnish the dish with fresh chopped dill, if using.

Finish by drizzling an extra amount of honey over the top of the carrots, feta, and fresh dill, to taste.

Serve immediately as a delicious side dish.
