Heat 1 tablespoon of vegetable or sunflower oil in a pan over medium heat. Add the finely chopped onion and cook until it becomes soft, about 3-5 minutes.

Add the crushed garlic cloves, grated ginger, and finely chopped green chilies to the pan. Cook for another minute, stirring occasionally, until fragrant.

Add the turkey mince to the pan. Use a spoon to break up the mince and cook until it changes color and is no longer pink, about 5-7 minutes.

Stir in the turmeric powder, coriander powder, cumin powder, garam masala, and salt. Mix all the spices thoroughly with the mince, ensuring it's well coated.

Add the tomato puree and water to the mixture. Mix well, then cover the pan and cook for 10 minutes, or until all the water has evaporated and the mince is fully cooked through.

Once cooked, stir in the chopped fresh coriander and the juice from 1/2 a lemon. Mix well and then turn off the heat. Set aside to cool slightly.

Take 4 slices of bread. Spread butter evenly on one side of each slice.

On one buttered side of a bread slice, spread a layer of mayonnaise or mint chutney, if using.

Layer slices of cucumber, tomato, and red onion over the mayonnaise/chutney.

Spoon a generous amount of the prepared turkey mince mixture over the vegetables.

Add another layer of sliced cucumber, tomato, and red onion on top of the mince.

Cover with another buttered slice of bread.

Cut the sandwich in half before serving.
