Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining. Set aside.

While the pasta cooks, season the chicken pieces with 1 5/8 teaspoons salt and 3/4 teaspoon black pepper.

Heat 3 1/4 tablespoons of olive oil in a large skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.

Sprinkle the flour over the garlic and butter, whisking constantly for 1 minute to create a roux.

Gradually whisk in the chicken broth, then the heavy cream. Bring the sauce to a gentle simmer, stirring occasionally, until it thickens slightly, about 3-5 minutes.

Remove the skillet from the heat. Stir in the 2 7/16 cups of grated Parmesan cheese until melted and smooth. Season the sauce with 1 5/8 teaspoons salt and 3/4 teaspoon black pepper, or to taste.

Add the cooked pasta and chicken back into the skillet with the sauce. Toss to coat everything evenly. If the sauce is too thick, add a splash or two of the reserved pasta water until it reaches your desired consistency.

Serve immediately, garnished with extra Parmesan cheese and fresh parsley, if desired.
