Pat the chicken pieces dry with a paper towel to ensure maximum crispiness.

In a large bowl, combine the dried chicken pieces with the cornflour, rice flour (if using), paprika, lemon pepper seasoning, onion powder, garlic powder, black pepper, and salt to taste. Add the oil to the mixture. Toss well until all chicken pieces are evenly coated.

Cook the chicken until crispy using your preferred method. For the oven method, preheat your oven to 220°C. Arrange the seasoned chicken in a single layer on a baking sheet and cook for 18–22 minutes, flipping halfway through, until golden and cooked through. (If using an air fryer, cook at 200°C for 10–14 minutes; if pan-frying, cook until golden and cooked through).

While the chicken is cooking, prepare the hot sauce glaze. In a pan, melt the butter over medium heat.

Add the minced garlic cloves to the melted butter and cook for 20–30 seconds until fragrant, being careful not to burn the garlic.

Stir in the chilli flakes and cook for another 15 seconds.

Stir in the hot sauce, lemon juice, and a pinch of salt. Let the sauce simmer briefly until it slightly thickens, about 1-2 minutes.

Once the chicken is crispy and cooked, add it directly into the pan with the hot sauce glaze. Toss thoroughly to ensure all chicken pieces are well coated.

Serve immediately. Optionally, sprinkle extra lemon pepper seasoning or squeeze fresh lemon juice over the top for an added burst of flavor.
