Cook the rice: Add 160 grams of uncooked white rice to a medium pot. Add water (approximately 2 cups, or according to package directions for 160 grams of rice) and cook on the stove until done, about 15-20 minutes. Once cooked, remove from heat and keep warm.

Prepare the chicken: Slice 600 grams of raw chicken breast into small, bite-sized pieces.

Cook chicken: Heat a large pan or wok over medium-high heat. Add the sliced chicken pieces and cook until the chicken is browned and cooked through, about 5-7 minutes. You may need to cook in batches to avoid overcrowding the pan.

Sauté vegetables and aromatics: Add 200 grams diced onion, 200 grams finely grated carrot, 4 teaspoons minced fresh garlic, and 4 teaspoons minced fresh ginger to the pan with the chicken. Sauté these ingredients together for 3-5 minutes until the onion softens and the aromatics are fragrant.

Add pineapple and sauces: Incorporate 200 grams pineapple chunks, 20 ml soy sauce, 200 ml teriyaki sauce, and 240 ml chicken stock into the pan. Stir all the ingredients well to combine, scraping up any browned bits from the bottom of the pan.

Simmer and thicken: Bring the mixture to a gentle simmer and let it cook for 5-8 minutes, stirring occasionally, until the sauce has thickened to your desired consistency. The pineapple will also soften slightly during this time.

Serve: Divide the cooked white rice among four serving bowls. Spoon the hot teriyaki chicken and vegetable mixture over the prepared white rice.

Garnish: Sprinkle 2 teaspoons of sesame seeds evenly over the top of each bowl before serving.
