Prepare the spices for boiling the chicken: Blend 6 cloves of garlic, 5 shallots, 1 tablespoon of turmeric, and 1 tablespoon of ginger until smooth.

Boil the chicken: Place 4 chicken leg quarters in a pot. Add the blended spices, 1 liter of water, 1 teaspoon of salt (or seasoning powder), a little lemongrass, and a little kaffir lime leaves.

Simmer the chicken: Boil the chicken in the broth for about 30-40 minutes until the chicken is tender.

Rest the chicken: Once the chicken is tender, remove it from the broth and set aside. Reserve the broth for making the frying batter.

Prepare the frying batter: In a mixing bowl, combine 1 cup of crispy frying flour and 1 egg. Gradually add the reserved chicken broth, stirring until you get a thick, smooth batter.

Coat the chicken: Dip the boiled chicken pieces into the prepared batter, ensuring they are fully coated.

Fry the chicken: Heat oil for frying in a pan. Once the oil is hot, place the battered chicken in the pan and fry until golden brown and crispy.

Smash the chicken (Ayam Penyet): After frying, gently smash the chicken with a mortar and pestle or a meat mallet to flatten it slightly and tenderize the meat.

Make the Green Sambal: Roughly pound the green chilies, green bird's eye chilies, and garlic in a mortar.

Season the Sambal: Add 1 teaspoon of brown sugar and 1/2 teaspoon of seasoning powder to the mortar. Pound until well combined.

Combine the Sambal: Squeeze the juice from 1 lime into the mortar. Then, pour 1/2 ladle of hot oil over the Sambal and mix well.

Serve: Serve the Indonesian Fried Chicken (Ayam Penyet) with the freshly made Green Sambal. It can be served with hot steamed rice and sliced cucumbers.
