In a separate small bowl, whisk together the oyster sauce, light soy sauce, dark soy sauce, granulated sugar, rice vinegar, and water until the sugar is fully dissolved. This is your Pad See Ew sauce.

If using fresh wide flat rice noodles, gently separate them by hand to prevent clumping during cooking. If using dried noodles, prepare according to package instructions (usually soaking in hot water until pliable, then draining).

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the marinated chicken to the pan and stir-fry until it is cooked through and lightly browned, about 3-5 minutes. Remove the cooked chicken from the pan and set it aside on a plate.

Add the remaining 1 tablespoon of vegetable oil to the same wok or skillet. Add the broccoli florets and stir-fry for 3-4 minutes until they are bright green and slightly tender-crisp.

Add the separated wide flat rice noodles to the pan with the broccoli. Pour the prepared Pad See Ew sauce over the noodles and vegetables. Stir-fry everything together vigorously, tossing to coat the noodles and broccoli evenly with the sauce. Continue to stir-fry for 2-3 minutes, allowing the noodles to absorb the flavors.

Push the noodles and vegetables to one side of the pan, creating an empty space. Crack the large egg into the empty side of the pan and quickly scramble it with your spatula until just set.

Once the egg is scrambled, combine it with the noodles, broccoli, and sauce, tossing everything together.

Return the previously cooked chicken to the pan. Stir everything together one last time to ensure all ingredients are well combined and heated through. Serve immediately.
