Preheat the air fryer to 450°F.

In a medium bowl, toss the cubed ribeye steak with the neutral oil, salt, and black pepper until evenly coated.

Arrange the seasoned steak cubes in a single layer in the air fryer basket. Ensure not to overcrowd the basket; cook in batches if necessary.

Air fry for 6–8 minutes, flipping the steak bites halfway through the cooking time, until they reach your desired doneness.

While the steak is cooking, prepare the cowboy butter. In a microwave-safe bowl, melt the unsalted butter. Add the dijon mustard, diced red onions, grated garlic, lemon zest, lemon juice, chopped fresh herbs, chili powder, dried oregano, smoked paprika, garlic powder, red pepper flakes, salt, and black pepper. Mix well to combine.

Once the steak bites are cooked, immediately transfer them to a serving bowl. Pour the warm cowboy butter over the steak bites and toss to coat thoroughly. Garnish with additional fresh herbs if desired.
