Prepare the relish: In a small bowl, combine the sweet pickle relish, finely diced yellow onion, Dijon mustard, apple cider vinegar, and black pepper. Stir well to combine and set aside to allow flavors to meld.

Preheat a large skillet or grill pan over medium heat. Add the kielbasa portions to the hot pan. Cook for 8-10 minutes, turning occasionally, until the kielbasa is nicely browned and heated through.

While the kielbasa cooks, brush the inside of the hot dog buns with melted butter. You can lightly toast the buns in a separate pan or directly on the skillet/grill pan for 1-2 minutes per side until golden brown, if desired.

Once the kielbasa is cooked and the buns are warmed, assemble the sandwiches. Place one cooked kielbasa portion into each toasted bun.

Spoon a generous amount of the prepared relish over each kielbasa. Add any optional toppings such as warm sauerkraut or spicy brown mustard, if desired. Serve immediately.
