Preheat your oven to 180°C (350°F).

In a small oven-safe dish, combine the peeled garlic cloves, sesame seeds, and olive oil. Ensure the garlic is mostly submerged in the oil. Add the sprig of fresh rosemary on top.

Roast in the preheated oven for 25-30 minutes, or until the garlic cloves are golden brown and very soft, and the sesame seeds are toasted. Carefully remove from the oven and let cool slightly.

In a separate serving bowl, add the softened cream cheese and mayonnaise.

Spoon the roasted garlic, toasted sesame seeds, and the infused olive oil from the roasting dish over the cream cheese and mayonnaise mixture.

Generously sprinkle the grated Parmesan cheese, chopped chives, freshly ground black pepper, and chili flakes over the mixture. Drizzle the honey in a spiral pattern over the top.

Using a fork, thoroughly mix all the ingredients together in the bowl until well combined and creamy. For a smoother dip, you can mash some of the garlic cloves as you mix.

Garnish the finished dip with an additional drizzle of olive oil, a sprinkle of sesame seeds, a few extra chili flakes, and a couple of reserved roasted garlic cloves.

Serve immediately with toasted bread or your favorite crackers.
