Preheat your oven to 375°F. Line a baking sheet with parchment paper.

In a blender or food processor, blend the cottage cheese until it is completely smooth. There should be no curds visible.

In a large mixing bowl, combine the blended cottage cheese, the 1 egg (for the dough), self-rising flour (or all-purpose flour, baking powder, and salt if using), grated Parmesan cheese, garlic powder, and 1/2 teaspoon salt. Mix until a sticky dough forms. Do not overmix.

Lightly flour your hands and a clean work surface. Divide the dough into 4 equal pieces.

Take each piece of dough and roll it into a log, approximately 6-8 inches long. Bring the ends of the log together to form a bagel shape, pressing firmly to seal the ends.

Place the shaped bagels on the prepared baking sheet. If using toppings, brush the tops of the bagels with the beaten egg wash and sprinkle with extra Parmesan cheese or garlic seasoning as desired.

Bake in the preheated oven for 22-25 minutes, or until the bagels are golden brown and firm to the touch. For a crispier crust, you can broil them for the last 1-2 minutes, watching carefully to prevent burning.

Remove from the oven and let cool slightly on a wire rack before serving. Enjoy warm with butter, cream cheese, or use as the base for a protein-packed sandwich.
