Measure 1 1/4 cups of chopped fruit. If you plan to add vegetables, use 1 cup of chopped fruit and 1/4 cup of chopped vegetables. Add the chopped fruit (and vegetables, if using) to a blender.

Measure 1/4 cup of no sugar added juice (such as prune, apple, or grape juice). Pour the juice into the blender with the fruit. You may add a little more juice if needed to achieve a very creamy consistency when blending.

Blend the fruit and juice mixture until completely smooth. If desired, add 1 teaspoon of honey or maple syrup and 1 teaspoon of vanilla extract to the blended mixture and blend again briefly to combine.

Pour the blended mixture from the blender into a saucepan. Add 3 tablespoons of unflavored gelatin to the saucepan.

Heat the mixture over low to medium-low heat, stirring constantly, until all the gelatin has dissolved. This should take approximately 3 to 5 minutes. Do not allow the mixture to boil.

Once the gelatin is fully dissolved, carefully pour the mixture into a liquid measuring cup. This will make it easier to pour into the molds.

Pour the mixture from the measuring cup into silicone molds. If any pouring gets messy, use a spatula to gently slide the mixture into any remaining empty molds.

Place the filled molds in the refrigerator for about 1 to 2 hours, or until the fruit snacks are completely set. For a firmer snack, use a higher ratio of fruit; for a more jello-like texture, use a higher ratio of juice.
