Place the ground pork onto a clean cutting board. Use a knife to make several shallow cuts across the surface of the ground pork to help it absorb the seasonings.

While the pork is cooking, prepare the glaze. In a small bowl, combine the hoisin sauce and honey, mixing well.

Once the initial cooking time is complete, carefully remove the air fryer basket. Using a pastry brush, spread the red glaze evenly over the entire surface of the pork.

Sprinkle the white sesame seeds generously over the glazed pork.

Return the air fryer basket with the glazed and sesame-seeded pork to the air fryer. Continue to cook for another 8-10 minutes, or until the jerky is fully cooked, caramelized, and has reached your desired crispness. Keep a close eye on it to prevent burning.

Once fully cooked, carefully remove the pork jerky from the air fryer. Transfer the cooked pork jerky (still on the parchment paper) onto a clean cutting board or wire rack to cool slightly.

Using a sharp knife or kitchen shears, cut the large sheet of pork jerky into smaller, rectangular pieces, about 1x3 inches, or your preferred size. Serve warm or at room temperature.
