Prepare the beef by thinly slicing it against the grain. Chop the broccoli into bite-sized florets.

In a medium bowl, combine all the sauce ingredients: soy sauce, sesame oil, cornstarch, oyster sauce, chili flakes, ginger garlic paste, and water. Whisk well until thoroughly combined and the cornstarch is dissolved.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced garlic and sauté for 30 seconds until fragrant.

Return the cooked beef to the pan with the broccoli. Add the instant noodles (without their seasoning packets) directly into the pan.

Pour the prepared sauce evenly over the noodles, beef, and broccoli. Stir gently to combine all ingredients.

Cover the pan and cook for 1 minute. This will allow the noodles to soften and absorb the sauce, and the flavors to meld.

While the noodles are cooking, heat the remaining 1/2 tablespoon of vegetable oil in a separate small pan over medium heat. Fry the eggs one at a time to your desired doneness (e.g., sunny-side up, over easy).

Uncover the pan with the noodles and stir everything together one last time. Divide the beef and broccoli noodles among four serving bowls. Top each serving with a fried egg and serve immediately.
