Combine water, black tea bags (or loose leaf tea in a tea infuser), sliced ginger, cinnamon stick, crushed cardamom pods, whole cloves, star anise pod, and black peppercorns in a small saucepan.

Bring the mixture to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for 5 minutes.

Remove the saucepan from the heat and let the chai concentrate steep for at least 15 minutes, or up to 30 minutes for a stronger flavor. The longer it steeps, the more intense the spice flavor will be.

Strain the chai concentrate through a fine-mesh sieve into a heatproof pitcher or jar, discarding the solids. Let the concentrate cool completely to room temperature, then refrigerate for at least 2 hours, or until thoroughly chilled.

Once the chai concentrate is chilled, combine it with the full-fat coconut milk and maple syrup in a large pitcher or serving carafe. Stir well to combine.

Fill four tall glasses with ice cubes. Pour the iced coconut chai mixture over the ice.

Garnish each glass with a sprinkle of ground cinnamon and a few toasted coconut flakes, if desired. Serve immediately and enjoy!
