Ingredients
For the Skillet
- 1 tablespoon olive oil
- 1 pound ground beef, 80/20 lean
- 1 yellow onion, medium, diced
- 2 garlic cloves, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes, or more, to taste
- 1 can diced tomatoes, 14.5 ounces, undrained
- 1 can black beans, 15 ounces, rinsed and drained
- 1/2 cup beef broth
- 3 cups broccoli florets, fresh or frozen
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For the Rice
- 1 1/2 cups long-grain white rice
- 3 cups water
- 1/2 teaspoon salt
For Garnish (Optional)
- 1/4 cup fresh cilantro, chopped
- 1/2 cup shredded cheddar cheese

Prepare the rice: In a medium saucepan, combine the long-grain white rice, 3 cups of water, and 1/2 teaspoon of salt. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for 15-18 minutes, or until all water is absorbed and rice is tender. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.

While the rice cooks, prepare the skillet: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and no longer pink, about 5-7 minutes. Drain any excess grease.

Add aromatics and spices: Reduce heat to medium. Add the diced yellow onion to the skillet with the beef and cook until softened, about 3-5 minutes.
