Rinse the jasmine rice thoroughly under cold water until the water runs clear. Combine the rinsed rice, water, and salt in a medium saucepan. Bring the mixture to a boil over medium-high heat.

Once boiling, immediately reduce the heat to low, cover the saucepan tightly with a lid, and let it simmer for 15 minutes. Do not lift the lid during this time.

Remove the saucepan from the heat and let it rest, still covered, for an additional 10 minutes. This allows the rice to steam and become fluffy. Fluff with a fork before serving.

While the rice is cooking, prepare the spinach. Wash the fresh spinach thoroughly and remove any tough stems. Mince the garlic cloves.

Heat the olive oil in a large skillet or wok over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 30 seconds until fragrant, being careful not to burn the garlic.

Add the fresh spinach to the skillet. It will appear to be a large amount, but it will wilt down significantly. Cook, stirring occasionally, until the spinach is completely wilted, which should take about 3 to 5 minutes.

Stir in the soy sauce, sesame oil, and freshly ground black pepper. Cook for another 1 minute, ensuring all ingredients are well combined and the spinach is evenly seasoned.

Serve the garlic sautéed spinach immediately alongside the fluffy jasmine rice.
