In a large mixing bowl, combine the softened unsalted butter and powdered sugar. Beat with an electric hand mixer on medium speed until the mixture is pale and fluffy, about 3-5 minutes.

Pour the beaten egg into the butter mixture. Continue to whisk with the electric mixer until the egg is fully incorporated and the mixture is smooth.

Add the corn starch, milk powder, and cake flour to the wet mixture. Initially mix with a spatula until just combined, then turn out onto a clean surface and knead by hand until a smooth, cohesive dough is formed. Do not overmix.

Preheat your oven to 285°F. Line a baking sheet with a silicone mat or parchment paper.

Take small portions of dough, approximately 15 grams each. Roll each portion into a spherical shape to form the cat's head. Attach tiny pieces of dough and mold them to form the ears. For some cookies, you can add small brown dough pieces (made by mixing a tiny bit of cocoa powder into a small portion of the dough) to create spots or stripes before baking.

Place the shaped cat cookies on the prepared baking sheet, leaving a little space between each. Bake in the preheated oven for 20 minutes, or until the edges are lightly golden.

Once baked, remove the cookies from the oven and let them cool completely on a wire rack. While cooling, melt the dark chocolate using a double boiler or microwave. Transfer the melted chocolate to a fine-tipped piping bag or a small ziploc bag with a tiny corner snipped off.

Once the cookies are cool, pipe facial features such as eyes, noses, mouths, and additional stripes or whiskers onto the cat cookies using the melted dark chocolate. Allow the chocolate to set before serving or storing.
