Prepare the Special Sauce: In a small bowl, whisk together mayonnaise, rice vinegar, soy sauce, sriracha, sesame oil, garlic powder, onion powder, and sugar until well combined. Taste and adjust seasoning if necessary. Set aside.

Prepare the Patties: In a medium bowl, gently mix ground beef with soy sauce, mirin, garlic powder, black pepper, and salt. Do not overmix. Divide the mixture into 8 equal portions (about 2 ounces each) and form them into thin patties, slightly wider than your buns, as they will shrink during cooking.

Toast the Buns: Heat a large skillet or griddle over medium heat. Brush the cut sides of the sesame seed buns with melted butter. Place the buns cut-side down on the skillet and toast for 1-2 minutes, or until golden brown and lightly crispy. Remove and set aside. Keep the skillet on the heat.

Cook the Patties: Place the patties on the hot skillet. Cook for 2-3 minutes per side for medium-well, or until desired doneness. During the last minute of cooking, place a slice of American cheese on top of 4 of the patties to melt.

Assemble the Big Arch: Take the bottom half of a toasted bun. Spread a generous amount of Special Sauce on it. Top with a cheesy patty, a handful of shredded lettuce, diced onion, and a few pickle slices. Place the middle bun slice on top.

Continue Assembly: Spread more Special Sauce on the middle bun slice. Add a plain patty, more shredded lettuce, diced onion, and pickle slices. Finally, place the top bun on the burger. Repeat for the remaining burgers. Serve immediately.
