In a medium bowl, crack the eggs and whisk them vigorously with a fork or whisk until the yolks and whites are fully combined and slightly frothy. Stir in the heavy cream (if using), salt, and 1/4 teaspoon of freshly ground black pepper.
Melt the unsalted butter in a non-stick skillet over medium-low heat. Ensure the butter coats the entire bottom of the pan.

Pour the egg mixture into the skillet. Immediately add the cubed cream cheese, distributing it evenly over the eggs.

Let the eggs cook undisturbed for about 30 seconds, allowing the edges to just begin to set. Then, using a rubber spatula, gently push the cooked eggs from the edges towards the center, tilting the pan to allow uncooked egg to flow underneath.
