Prepare the tomatoes: Slice the tomatoes into rounds. Arrange them on a plate and season generously with kosher salt, freshly ground black pepper, and dried oregano (or Italian seasoning). Set aside.

Prepare the brioche: Take eight slices of brioche bread. Spread approximately 2 tablespoons of bacon jam evenly onto one side of four of the brioche slices. Spread approximately 1 tablespoon of Dijon mustard evenly onto one side of the remaining four brioche slices.

Place all eight slices of brioche bread (both bacon jam and Dijon sides down) onto the hot surface. Toast until golden brown and slightly crispy, about 2-3 minutes per side. Be careful not to burn the brioche as it can toast quickly due to its sugar content.

Assemble the sandwiches: To assemble each sandwich, place one toasted brioche slice with the bacon jam side up on a serving plate. Layer a portion of the seasoned tomato slices on top of the bacon jam. Carefully place one smoky Gouda fried egg on top of the tomato slices. Finally, place one toasted brioche slice with the Dijon mustard side down on top to complete the sandwich.
