Preheat your oven to 350°F. Lightly grease a loaf pan.

In a large bowl, combine the ground beef, Trader Joe's Organic Bread Crumbs, egg, chopped onion, minced garlic, Worcestershire sauce, 1/4 cup ketchup, salt, and black pepper. Mix gently until just combined. Do not overmix.

Press the meat mixture evenly into the prepared loaf pan.

In a small bowl, whisk together the 1/2 cup ketchup, brown sugar, and apple cider vinegar for the glaze.

Pour half of the ketchup glaze over the top of the meatloaf.

Bake for 30 minutes. While the meatloaf bakes, prepare the mashed cauliflower.

Steam or boil the cauliflower florets until very tender, about 10-15 minutes. Drain well.

Transfer the cooked cauliflower to a large bowl. Add the butter, milk, salt, and black pepper. Mash with a potato masher or an immersion blender until smooth and creamy. Taste and adjust seasoning if needed.

After 30 minutes of baking, remove the meatloaf from the oven and spread the remaining ketchup glaze over the top. Return to the oven and bake for another 20 minutes, or until the internal temperature reaches 160°F.

Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing.

Slice the meatloaf and serve with the mashed cauliflower, garnished with fresh chives.
