Prepare the crust: In a food processor, combine the ground almonds, soaked dates, melted coconut oil, and pinch of sea salt. Process until the mixture is well combined and starts to clump together, resembling wet sand.

Press the crust mixture evenly into the bottom of 6 individual mini tartlet molds or muffin cups (lined if desired). Use the bottom of a small glass or your fingers to create a firm, even layer.

Prepare the filling: Rinse the food processor. Add the peeled and pitted avocados, lime juice, agave nectar, chilled coconut milk, probiotic powder, vanilla extract, and pinch of salt. Process until the mixture is completely smooth and creamy, scraping down the sides as needed.

Spoon the avocado lime filling into the prepared tartlet crusts. Smooth the tops with a small spatula or the back of a spoon.

Chill the tartlets in the refrigerator for at least 2 hours, or until the filling is firm. This allows the flavors to meld and the tartlets to set.

Before serving, garnish with lime zest and fresh berries, if desired.
