Thoroughly wash the pork trotters under cold water.

Place the washed pork trotters into a large pot. Add enough cold water to fully cover the trotters. Add 2 slices of ginger and 2 tablespoons of cooking wine to the pot.

Bring the water to a rolling boil over high heat. As the water boils, use a ladle to skim off any foam or impurities that rise to the surface. Continue to skim until the water is relatively clear.

Once boiled and skimmed, carefully remove the pork trotters from the pot. Rinse them thoroughly under warm running water to remove any remaining residue or strong odors.

Place the cleaned pork trotters into the pot of your rice cooker. Add the remaining 4 slices of ginger, the bundle of green onions, bay leaves, cinnamon stick, dried chiles, and rock sugar.

Pour in the light soy sauce, oyster sauce, and dark soy sauce. Add the tablespoon of soybean paste.

Pour in the entire can of beer. This helps tenderize the meat and removes any strong pork smell.

Add enough boiling water to the rice cooker to completely cover all the ingredients.

Close the lid of the rice cooker. Press the "cook" button (or the appropriate setting for stew/braise if available). Allow the pork trotters to cook for approximately 1 hour.

Once the cooking cycle is complete, the pork trotters will be incredibly soft, flavorful, and not greasy. Serve immediately while hot.
