Preheat your oven to 200°C / 400°F. Line a baking tray with parchment paper.

For each mini Tatin, drizzle 1/2 teaspoon of honey in small circles on the prepared baking tray. Then, drizzle 1/2 teaspoon of balsamic vinegar over the honey circles, followed by 1/2 teaspoon of olive oil, creating distinct seasoned spots on the tray.

Sprinkle 1 pinch of salt and 1 pinch of dried thyme over each of the prepared circles on the baking tray.

Take 3 cherry tomatoes and cut them in half. Place these 6 cherry tomato halves cut-side up on each seasoned circle on the baking tray.

Roll out a sheet of puff pastry. Using a round cutter, cut out circles of puff pastry that are slightly larger than the arrangement of tomatoes.

Place one puff pastry circle over each group of tomatoes, gently pressing down the edges to enclose the tomatoes and form a sealed mini tatin.

In a small bowl, whisk 1 egg yolk. Using a pastry brush, lightly brush the top of each puff pastry circle with the whisked egg yolk.

Bake the mini Tatins for about 20 minutes, or until the pastry is golden brown and puffed.

Carefully remove the baking tray from the oven. Using a knife or spatula, gently loosen the edges of each tatin from the parchment paper. Carefully flip each warm tatin over onto a serving plate or board.

Tear 1 ball of burrata (per 6-8 Tatins) and place creamy pieces on top of the warm Tatins. Garnish with a few fresh basil leaves before serving.
