In a large bowl, combine 1 cup warm milk (100-110°F / 38-43°C), 1/4 cup granulated sugar, and 2 1/4 teaspoons instant yeast. Stir gently and let sit for 5-10 minutes until foamy.

To the yeast mixture, add 1 large egg, 1 egg yolk, 1/4 cup melted unsalted butter, and 1 teaspoon vanilla extract. Mix well.

In a separate bowl, whisk together 3 cups all-purpose flour and 1/2 teaspoon salt.

Gradually add the dry ingredients to the wet ingredients, mixing until a shaggy dough forms.

Transfer the dough to a lightly floured surface and knead for 8-10 minutes until smooth and elastic.

Lightly grease a clean bowl with oil. Place the dough in the bowl, turning once to coat. Cover the bowl with plastic wrap or a clean kitchen towel. Let it rise in a warm place for 1-1.5 hours, or until doubled in size.

Once the dough has doubled, punch it down gently to release air. Transfer it to a lightly floured surface.

Roll the dough into a large rectangle, approximately 12x18 inches (30x45 cm).

Evenly spread 1/2 cup softened unsalted butter over the entire surface of the dough rectangle.

In a small bowl, combine 1/2 cup brown sugar and 1 tablespoon cinnamon. Sprinkle this mixture generously over the buttered dough.

Starting from one of the longer sides, tightly roll the dough into a log.

Use a sharp knife or dental floss to cut the log into 12 equal-sized rolls.

Arrange the rolls in a greased 9x13 inch (23x33 cm) baking pan. Cover the pan and let the rolls rise in a warm place for another 30-45 minutes, or until puffy and nearly doubled in size.

Preheat your oven to 375°F (190°C).

Bake the cinnamon rolls for 20-25 minutes, or until golden brown and cooked through.

While the rolls are baking, in a medium bowl, beat together 4 ounces (113g) softened cream cheese and 1/4 cup softened unsalted butter until smooth and creamy.

Gradually add 1 cup powdered sugar, mixing until fully incorporated and smooth.

Stir in 1/2 teaspoon vanilla extract. Add 1-2 tablespoons milk, one tablespoon at a time, until the frosting reaches your desired consistency.

Once the cinnamon rolls are out of the oven and still warm (not piping hot, but warm enough to slightly melt the frosting), generously spread the cream cheese frosting over them.

Serve immediately and enjoy!
