Carefully separate 3 egg yolks (or 4 for a thicker sauce) and place them into a tall, clear jug or glass suitable for an immersion blender.

Squeeze the juice from one small lemon directly into the jug with the egg yolks. Add the salt and black pepper to taste.

Add 1 tablespoon of hot water to the jug with the other ingredients.

Insert an immersion blender into the jug, ensuring the blade is resting at the bottom. Begin blending the ingredients together until the mixture is smooth. Do not lift the blender during this initial blending phase.

While keeping the immersion blender continuously running and at the bottom of the jug, gradually and slowly pour in the 1 cup of hot melted butter into the mixture. This continuous blending while slowly adding the butter is crucial to emulsify the sauce and make it creamy.

Continue blending until all the butter is incorporated and the sauce becomes thick and creamy. If the finished sauce is too thick for your preference, stir in a bit more warm water, 1 teaspoon at a time, to achieve the desired consistency.
