With a grown-up's help, slice the peeled sweet potatoes into 1/4-inch thick rounds. Then, use a star-shaped cookie cutter to cut out fun star shapes! You can re-roll and cut any leftover pieces.

In a big bowl, gently toss the sweet potato stars with olive oil, cornstarch, paprika, garlic powder, salt, and pepper. Make sure every star gets a little bit of seasoning!
