In a large bowl, combine warm water, granulated sugar, and active dry yeast. Let sit for 5-10 minutes until foamy.

Add olive oil and salt to the yeast mixture. Gradually add the all-purpose flour, mixing until a shaggy dough forms.

Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, turning once to coat. Cover with plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.

While the dough is rising, prepare the plums. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the sliced plums and sear for 2-3 minutes per side, until slightly softened and caramelized. Remove from heat and toss with chili crisp.

Preheat your woodfire oven to its highest temperature (typically 700-900°F). If using a conventional oven, preheat to 500°F with a pizza stone inside for at least 30 minutes.

Once the dough has risen, punch it down gently and divide it into 2 equal portions. On a lightly floured surface, stretch or roll each portion into a 10-12 inch round.

Transfer one pizza dough round to a lightly floured pizza peel. Spread half of the ricotta cheese evenly over the dough, leaving a 1/2-inch border. Top with half of the seared plums, fresh mozzarella, and grated Parmesan cheese. Season with black pepper.

Carefully slide the pizza into the preheated woodfire oven. Cook for 2-4 minutes, rotating as needed, until the crust is golden and bubbly and the cheese is melted and slightly browned. If using a conventional oven, cook for 8-12 minutes.

Remove the pizza from the oven. Garnish with fresh basil leaves and drizzle with balsamic glaze. Repeat with the second pizza.

Slice and serve immediately.
