Heat 1 tablespoon of olive oil in a large skillet or pan over medium heat.

Add the diced yellow onion to the pan and cook for 5 minutes, stirring occasionally, until it has softened and become translucent.

Add the minced garlic to the pan with the onions and cook for 1 minute more, stirring constantly, until fragrant.

Stir in the finely chopped mushrooms and finely chopped walnuts. Continue to cook for 8-10 minutes, stirring occasionally, until the mushrooms have released their liquid and the mixture appears relatively dry.

Transfer the cooked onion, garlic, mushroom, and walnut mixture to a large mixing bowl. Set aside to cool slightly.

Add the rinsed and drained black beans to the same large bowl. Using a fork or potato masher, mash the black beans thoroughly until they are mostly smooth but still retain some texture.

To the bowl, add the cooked brown rice, panko breadcrumbs, nutritional yeast, soy sauce, smoked paprika, and cumin.

Season the mixture generously with salt and black pepper to taste. Start with 1/2 teaspoon of salt and 1/4 teaspoon of pepper, then adjust as needed.

Mix all the ingredients thoroughly by hand. Continue mixing and kneading until everything is well combined and the mixture is sticky enough to form cohesive patties.

Divide the mixture and form it into 4 to 6 patties of your desired size and thickness. Place them on a plate or baking sheet.

Return the skillet to medium heat and add a little more olive oil, just enough to lightly coat the bottom of the pan.

Carefully place the formed veggie patties into the hot skillet. Cook for 4-5 minutes per side, or until they are golden brown and heated through. You may need to cook them in batches.

Serve the hot veggie burgers immediately on buns with your favorite toppings.
