Chop the spareribs into bite-sized pieces.

Add 1 tablespoon of cornstarch to the chopped spareribs and mix it in well to tenderise the pork.

Cover the spareribs with cold water and soak for 15 minutes, giving it a mix every so often. This step is important for making the spareribs tender.

After soaking, rinse the spareribs well, drain, and then pat them dry with kitchen roll to remove excess moisture.

Rinse the fermented black beans, then roughly chop them.

In a bowl, add the spareribs, 1 tablespoon light soy sauce, 1 teaspoon shaoxing wine, 1 teaspoon oyster sauce, 1/2 teaspoon white pepper, 1/2 teaspoon salt, and 1 teaspoon sugar. Mix all of these ingredients very well.

Add the 4 cloves of minced garlic, the 2 tablespoons of roughly chopped fermented black beans, and the 2-3 minced red and green chillis. Mix well to combine.

Now, finish by adding 1 tablespoon of cornstarch and give it a mix.

Add 1 tablespoon of sesame oil and mix well. This gives extra aroma and helps to seal everything off.

Allow everything to marinate for at least 20 to 30 minutes, or you can do it overnight.

Transfer the marinated ribs to a heatproof plate, placing them in an even, thin layer.

Steam the ribs for 20 minutes.

Garnish the steamed spareribs with some chopped spring onion and serve it with some steamed white rice. Make sure to get a spoon and spoon the gorgeous sauce all over the rice so it soaks in.
