Bring a large pot of water to a rolling boil.

Add the 225 grams of pasta to the boiling water and cook according to package directions until al dente. Drain the pasta and set it aside.

While the pasta is cooking, heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large pan or skillet over medium-high heat. Add the 200 grams of mushrooms and cook until they are nicely browned, which should take approximately 5-7 minutes.

Add the diced shallots and minced garlic to the pan with the mushrooms. Cook, stirring frequently, until the aromatics are fragrant, about 2-3 minutes.

Pour in the 1/2 cup of dry white wine. Use a wooden spoon or spatula to scrape up any browned bits from the bottom of the pan, deglazing it thoroughly.

Add the 1 cup of chicken broth and 1/2 cup of heavy cream to the pan. Bring the mixture to a gentle simmer.

Add the cooked pasta and 1/2 cup of grated Parmesan cheese to the simmering sauce. Toss thoroughly to combine all ingredients, ensuring the pasta is well coated.

Season the pasta with salt and pepper to taste. Stir in the 1/4 cup of fresh parsley.

Serve immediately and enjoy!
