In a saucepan over medium heat, melt the butter. Continue cooking for about 5 minutes, stirring occasionally, until it foams and the milk solids turn golden brown with a nutty aroma. Remove from the heat immediately and pour into a heat-safe bowl. Let it cool for at least 15 minutes.

In a large bowl or stand mixer, combine the cooled brown butter, dark brown sugar, and granulated sugar. Mix until well combined, about 2-3 minutes.

Preheat the oven to 350°F. Line a baking sheet with parchment paper. Place the chilled dough balls on the prepared baking sheet, leaving about 2 inches of space between each cookie.

Bake for 13–15 minutes, or until the edges are lightly golden and the centers are still slightly soft and puffy. Do not overbake.
